What sets this menu apart is the ham tasting: five different cuts, one after the other, for comparison. Gran Reserva, Cebo-fed Iberian, Field-raised Iberian, Bellota 50%, and Bellota 100%. Lined up, you immediately understand why some cost what they do. Before that, three classic appetizers arrive: patatas bravas, olives, and Spanish omelet, along with a small glass of gazpacho topped with ham shavings. Next comes the selection of cheeses and cured meats, the small ham and cheese cubes, and the toasts with olive oil or tomato. The drinks are chosen separately. It's the most complete option on the menu, and it works well as a full meal rather than just a snack.
